So this is interesting. It turns out the butter we usually buy IS cultured butter, albeit not particularly tangy (I'd been wondering about the slightly tangy taste). It's a lot more popular in Europe than it is in the US, perhaps because Americans are giant babies.

This thing was a bitch to put together, the bars where cut horribly, one was an inch off what it was supposed to be. Luckily I had some inch long screw standoffs from a crazy computer case years ago, they fit perfectly, and now you can't even tell.
